“It's a condition that it's really a big burden along the border,” said Cavazos.
“All of them. They're prepared with ingredients that are not always focused 100 percent on your health,” said Arunfo Vasquez of regional food options. Vasquez is a general manager of Quinto Sol, a vegetarian restaurant that caters to healthy eaters.
Valsquez touched on some of the healthier ingredients included in popular dishes. Quinto Sol tamaes mix in alternative ingredients, “with mozzarella cheese and it's not made with manteca. It's made with margarine,” said Vasquez. “It's going to have few calories and it's going to be healthier to your heart.”
